Salmon with Strawberry Salsa on Microgreens

Grilled Salmon Strawberry Jalapeño Salsa
Ingredients Instructions
  • 4 Superior Fresh Atlantic Salmon Fillets
  • Kosher salt and black pepper to taste
  • 1. Preheat grill to medium high heat.
  • 2. Season the salmon fillets with salt and pepper.
  • 3. Oil the grill grates or spray them with cooking spray then place the salmon fillets on and grill each side for approximately 3-4 minutes or until desired degree of doneness is reached.
Ingredients Instructions
  • 1 pound fresh strawberries, diced
  • 1 jalapeño, seeded, deveined and finely diced
  • 1/2 cup loosely packed cilantro leaves, chopped
  • 1/3 cup red onion, diced
  • Juice of a lime
  • Kosher salt and black pepper to taste
  • 1 pkg Superior Fresh Microgreens
  • 1. In a large bowl combine all (except microgreens) of the ingredients for the salsa and stir together until combined.
  • 2. Toss microgreens and half of the salsa together.
  • 3. Place Salmon on top of bed of greens/salsa mix.
  • 4. Top salmon pieces with remaining salsa.
