Grilled Salmon
Strawberry Jalapeño Salsa

- 4 Superior Fresh Atlantic Salmon Fillets
- Kosher salt and black pepper to taste
- 1. Preheat grill to medium high heat.
- 2. Season the salmon fillets with salt and pepper.
- 3. Oil the grill grates or spray them with cooking spray then place the salmon fillets on and grill each side for approximately 3-4 minutes or until desired degree of doneness is reached.

- 1 pound fresh strawberries, diced
- 1 jalapeño, seeded, deveined and finely diced
- 1/2 cup loosely packed cilantro leaves, chopped
- 1/3 cup red onion, diced
- Juice of a lime
- Kosher salt and black pepper to taste
- 1 pkg Superior Fresh Microgreens
- 1. In a large bowl combine all (except microgreens) of the ingredients for the salsa and stir together until combined.
- 2. Toss microgreens and half of the salsa together.
- 3. Place Salmon on top of bed of greens/salsa mix.
- 4. Top salmon pieces with remaining salsa.
