Apple Hand Pies
Salted Caramel Sauce

- 6-8 Medium apples
- 1 Tbsp Cinnamon, ground
- 1.5 tsp Clove, ground
- 1 Tbsp Vanilla Extract
- ½ tsp Nutmeg, ground
- ½ ea lemon, juiced
- 1 cup Granulated Sugar
- 1 ea Egg
- 3 Tbsp Butter, unsalted
- 3 Tbsp Flour
- 1 ea Pie Crust(store bought)
- 1. Clean, peel and medium dice apples. Put in bowl of water with lemon juice to avoid browning
- 2. Mix sugar, cinnamon, clove, nutmeg, vanilla in bowl
- 3. In appropriate sized pot, melt butter and add flour to make roux
- 4. Drain apples from water and combine sugar mix and apples. Add to pot and bring to boil
- 5. Reduce heat and simmer until apples are tender. Remove the apples from the heat and allow to coo
- 6. Prepare a pan with parchment paper and roll out pie crust and cut out circles 3-4 inches in diameter, place on the lined pan
- 7. Place 1/3 cup of apple filling in circles. Fold circles in half and pinch to close
- 8. Beat the egg until combined and brush the pies
- 9. Take fork or butter knife and make small holes or slices for air release
- 10. Bake in 400 degree oven for 25-30 minutes. Let cool for 15 minutes. Drizzle with caramel and serve

- 3 oz Butter, unsalted
- 4 oz Heavy Cream
- 2 tsp Salt
- 1. Melt sugar in small sauce pot until it browns into an amber color
- 2. Add cubed butter slowly and whisk to combine
- 3. Remove from the heat and slowly stir in the cream
- 4. Add salt and cool
