Grilled Horseradish Salmon with Three Bean Salad

Grilled Horseradish Salmon Three Bean Salad
Ingredients Instructions
  • 6 oz Superior Fresh salmon
  • 1/4 cup mayonnaise
  • 2 tablespoons chopped fresh basil
  • 2 tsp lemon juice
  • 2 tablespoons prepared Silver Spring Horseradish
  • 1 teaspoon soy sauce
  • 1 teaspoon Salt
  • 1 teaspoon Salt ½ teaspoon Pepper
  • 1. Combine the mayonnaise, basil, lemon juice, horseradish, soy sauce, salt and pepper in a small bowl and mix well
  • 2. Gently brush the salmon with the mixture on both sides. Preheat a grill on medium high heat
  • 3. When ready, place the salmon non skin side down. Grill until you get grill marks then turn ¼ and grill until marked
  • 4. Gently turn and finish grilling on the skin side until an internal temperature of 140 degrees

  • ½ lb Red Beans
  • ½ lb White Beans
  • ½ lb Black Eye Peas
  • 3/4 cup sour cream
  • 3 tablespoons vegetable oil
  • 1 tablespoon prepared white horseradish
  • 1 tablespoon soy sauce
  • 1 small minced garlic
  • 2 lbs Spring Mix
  • 1/2 teaspoon salt
  • ¼ tsp coarse black pepper
  • 1. Place the beans in a medium sauce pot and cover with water about 1” over the top of the bean
  • 2. Bring to a boil then reduce the heat and simmer until beans are tender
  • 3. Combine the sour cream, oil, prepare horseradish, soy sauce, minced garlic, and salt and pepper. Mix well and set aside
  • 4. When the beans are tender strain well and cool
  • 5. When ready toss the beans with the sour cream horseradish dressing. Then toss the bean dressing mix with the spring mix gently
  • 6. Top with the grilled salmon
