Grilled Horseradish Salmon
Three Bean Salad

- 6 oz Superior Fresh salmon
- 1/4 cup mayonnaise
- 2 tablespoons chopped fresh basil
- 2 tsp lemon juice
- 2 tablespoons prepared Silver Spring Horseradish
- 1 teaspoon soy sauce
- 1 teaspoon Salt
- 1 teaspoon Salt ½ teaspoon Pepper
- 1. Combine the mayonnaise, basil, lemon juice, horseradish, soy sauce, salt and pepper in a small bowl and mix well
- 2. Gently brush the salmon with the mixture on both sides. Preheat a grill on medium high heat
- 3. When ready, place the salmon non skin side down. Grill until you get grill marks then turn ¼ and grill until marked
- 4. Gently turn and finish grilling on the skin side until an internal temperature of 140 degrees

- ½ lb Red Beans
- ½ lb White Beans
- ½ lb Black Eye Peas
- 3/4 cup sour cream
- 3 tablespoons vegetable oil
- 1 tablespoon prepared white horseradish
- 1 tablespoon soy sauce
- 1 small minced garlic
- 2 lbs Spring Mix
- 1/2 teaspoon salt
- ¼ tsp coarse black pepper
- 1. Place the beans in a medium sauce pot and cover with water about 1” over the top of the bean
- 2. Bring to a boil then reduce the heat and simmer until beans are tender
- 3. Combine the sour cream, oil, prepare horseradish, soy sauce, minced garlic, and salt and pepper. Mix well and set aside
- 4. When the beans are tender strain well and cool
- 5. When ready toss the beans with the sour cream horseradish dressing. Then toss the bean dressing mix with the spring mix gently
- 6. Top with the grilled salmon
