Apple Crepe

Crepe Batter (1 lb) Spiced Apple Filling Caramel Sauce
Ingredients Instructions
  • ½ oz Sugar, granulated
  • Pinch of salt
  • 6 oz milk
  • 4 oz eggs (2ea.)
  • 4 oz A/P flour
  • 1 ½ oz vegetable oil
  • As needed, cooled, melted butter
  • Spiced apple filling
  • Whipped cream
  • 1. Weigh all ingredients in mixing bowl, whisk, and let sit for an hour or overnight.
  • 2. Heat small frying pan over medium heat, grease with a small amount of oil
  • 3. Pour about ¼ cup of batter into the pan
  • 4. Immediately swirl the pan, spreading the crepe batter into a thin, even layer
  • 5. Cook until slightly brown and bubbly, flip and finish cooking
  • 6. Place crepe onto a plate and brush with butter to keep moist
  • 7. Place filling inside and roll, or fold into quarters and serve

  • 4-5 apples, peeled and diced into small pieces
  • ¼ cup water
  • ½ lemon, juice
  • ½ cup sugar, granulated
  • 1 ¾ oz cornstarch
  • 1 ½ tsp vanilla extract
  • Cinnamon, cloves, nutmeg
  • Put all ingredients in a pot and cook over medium until apples are tender and the sauce is slightly thickened (a slightly syrupy consistency)

  • 1/3 cup water
  • ¾ cups heavy cream
  • 1. Add sugar and water to a heavy bottomed saucepot and cook over medium-high until it reaches light amber in color
  • 2. Remove from heat and slowly whisk in heavy cream
