- ½ oz Sugar, granulated
- Pinch of salt
- 6 oz milk
- 4 oz eggs (2ea.)
- 4 oz A/P flour
- 1 ½ oz vegetable oil
- As needed, cooled, melted butter
- Spiced apple filling
- Whipped cream
- 1. Weigh all ingredients in mixing bowl, whisk, and let sit for an hour or overnight.
- 2. Heat small frying pan over medium heat, grease with a small amount of oil
- 3. Pour about ¼ cup of batter into the pan
- 4. Immediately swirl the pan, spreading the crepe batter into a thin, even layer
- 5. Cook until slightly brown and bubbly, flip and finish cooking
- 6. Place crepe onto a plate and brush with butter to keep moist
- 7. Place filling inside and roll, or fold into quarters and serve

- 4-5 apples, peeled and diced into small pieces
- ¼ cup water
- ½ lemon, juice
- ½ cup sugar, granulated
- 1 ¾ oz cornstarch
- 1 ½ tsp vanilla extract
- Cinnamon, cloves, nutmeg
- Put all ingredients in a pot and cook over medium until apples are tender and the sauce is slightly thickened (a slightly syrupy consistency)

- ¾ cups heavy cream
- 1. Add sugar and water to a heavy bottomed saucepot and cook over medium-high until it reaches light amber in color
- 2. Remove from heat and slowly whisk in heavy cream
